Paring down further. These are not simply catch and release, but good knives that I just needs to cull for capacity purposes. I am the original owner of all of these, purchased from Michael at Knife Japan.Prices are shipped with USPS Priority in the US and include G&S fees. Will package deal. No trades.

Mikami Blue #1 carbon clad santoku. 173mm heel to tip, 52mm tall, and 160g. Rustic and phenomenal. Flattened bevels gently on a JKI 1200 & 6k. Some sharpening marks. Wonderful blue 1 heat treat. One tiny microchip in edge that I'll leave for the next owner to sharpen out (I'd use it without sharpening). I have a Mikami nakiri and it was a toss up of which to keep. $230 SOLD

Okubo Blue #2 carbon clad gyuto. 217mm heel to tip, 54mm tall, and 190g. Best food release/smooth cutting grind I've used. Gently smoothed on JKI stones. Rustic, again. Great ho/horn octagonal handle. Outpunches many forum favorites. Don't take my word for it, try a search here. $205 SOLD

Moriya Munemitsu suji. Mono Ginsan. 208x37mm and 148g. KJ calls it a double bevel yanagiba. Convex right side, flat left, righty grind. Fantastic knife. Sharpened once and it's my favorite stainless. Gaps between handles and tang filled (unprofessionally) with CA glue. Really great user and It'd not be on the block if I hadn't found a bolstered version. Out of stock for some time with KJ. $95 SOLD
