Hey everyone, time has come to release a fair chunk of my collection, saving money to buy a house with my partner and need to work out my priorities.
I will be doing measurements of blade hight and such soon, if you are interested in a knife and would like to know the measurement just shoot me a message I will try and get them to you ASAP.
All knives are $10 USD express shipping within Australia, willing to ship anywhere though overseas cost depends on your country, but i am happy to cover some of the fees. shoot me a message and we can sort it out!
These are all knives that are mainly sitting around and hardly getting used, so they are better off in someone else’s hands. If wanting to buy multiple I can happily lower the price.
Only trades I am wanting currently would be a Yo Jiro gyuto or Shihan gyuto, preferably around 240mm.

- Dalman KKF Massdrop Honyaki 240 gyuto. Not much to be said about this bad boy, got this second hand here on KKF when the opportunity arose, my first and only Honyaki, but I just think I prefer more classic clad knives. Great cutter for sure and it lead me to buying more Swedish metal, none of which has disappointed. I am happy to remove the patina if desired. $870 AUD, $626 USD SPF!!!! SOLD!!!!!
- Takada no Hamono 240 white 2 gyuto, my partner purchased this beautiful knife for me a year ago, amd while it saw plenty of use I have drifted more towards taller knives since. Has been sharpened and slightly thinned, which I think has been considered in the price. $390 AUD, $280 USD
- Konosuke YS 240 gyuto w/custom handle. This was my first big knife purchase a while ago, I got a custom ebony wood handle from Kaiso knives on Instagram that works great with the colours in the KU finish. Comes with the Kono Saya. $520 AUD, $375 USD
- Smedja Aspen 210 gyuto, 52100 “second”. I picked this one up as I was looking into getting a custom from this maker and wanted to try this first, I enjoyed it enough that I decided to go through with a custom which is on its way to me soon, so time for this to find a new home! $335 AUD, $241 USD
- Hitohira Y.Tanaka Yohei blue 1 240 gyuto, I very much love this one. Fantastic steel and profile, I am sure I will get more tanaka work in future but with wide bevels instead as that’s more my jam. Whether or not you pick up this particular one, you should get one of these knives for sure! $460 AUD, $330 USD SPF!!!!! SOLD!!!!!
- Sabatier 250 chef knife. Fun to use, surprisingly thin with a nice spring to it. Has only been honed on a steel since I got it, never seen a stone in its time with me. I have a new Sab so this one has to go. $110 AUD, $79 USD SOLD!!!!
- Takeda “small” cleaver. I am a bit fan of the Chinese chef knife, I have a quite a few, but wanted to have a crack with a good Japanese made one. I love it but I find myself wanted to be more lazy and rough with them, which you can’t do with this harder and thinner piece. Won’t be mad if this doesn’t sell, mad food release. $700 AUD, $505 USD
- Takeda honesuki. Wanted to try a honesuki and this came up on offer in a trade a few months ago, it’s fun but I don’t butcher poultry enough to justify holding onto it. $415 AUD, $300 USD SPF!!!! SOLD!!!!!!
- Florentine chef knife. Pleasantly surprised by this little number, an intoxicated purchase which turned out well. The steel is quite tough and resistant to chipping so I find myself using it at my second job on crappy plastic boards, with which it works well! Patina is well set so should have no problems with corrosion, might be fun to slightly thin but the thicker edge helps with its stability. Steel doesn’t hold an edge a super long time but pleasant to sharpen at the least. Comes with a nice leather sheath. $365 AUD, $260 USD
- Konosuke HD2 210 gyuto. Great knife, great steel. Got this one when I was going through a “thin and light” phase with my knives, doesn’t get picked up anymore which is a shame.comes with Saya. $440 AUD, $315 USD
- Hitohira Nakagawa Ginsan 210, custom handle. Bit short for me but a marvellous steel which really surprised me. Handle is red mallee burl and an ebony spacer. Comes with Saya. $405 AUD, $290 USD
- Shiro Kamo k-Tip 240 AS. Big boy, one of my first knives which was used maybe 3 times. Has been lightly thinned on the bevels. The finish on the exposed steel is a bit spotty and such, could do with a refinishing or polishing but I don’t have the energy or interest to do it myself. $140 AUD, $100 USD SPF!!!! SOLD!!!!
- Shiro Kamo white 2 210 Damascus gyuto. Another one my beautiful partner got me, I am not a fan of Damascus whatsoever so has gone unloved and neglected unfortunately. $200 AUD, $144 USD
- Orzel Knives V-toku 250 gyuto. My first custom knife I ever got, the maker did a stellar job with fit and finish and was very pleasant to deal with throughout the production. Steel is very nice, like a improved blue 2 as a best comparison. Grind is plenty thin. The handle is Gidgee with a titanium ferrule piece he hand filed. A regretful sale this one, only up for grabs as I have been very brutal with thinning my collection and this just fell short, behind my Jiro, Newham and such. $655 AUD, $470 USD
- TF Denka 240 gyuto. My most expensive knife as of yet, I asked for one from Goku with my specific measurements and after a short month in production this perfect specimen came to me. Great grind that’s void of any scary overgrind or such, if you want peak performance this may need some minor thinning but I haven’t felt the need to slap it on stones, I honestly don’t think it needs it. I have not sharpened or stropped this edge, been used maybe a dozen times at home very lovingly. Price is a bit high as it’s hardly been used and I am VERY reluctant to let this go, just hard to justify keeping this when my Mab has the same performance. $1150 AUD, $830 USD SPF'!!!!
- Hitohira Nakagawa white 2 Usuba. Hasn’t been used whatsoever, comes with Saya but I have misplaced the pin unfortunately. $250 AUD, $180 USD
- Sakai Suntenresu 165mm VG10 Nakiri. Seen some thinning on the stones, she isnt winning any beauty pageants but she cuts great, the steel holds amd sharpens well, the BEST vg10 I have ever used. Nothing wrong with it I just don’t have a huge love for Nakiri’s. $100 AUD, $72 USD
- Morihei 300mm gyuto stainless. Picked this up on sale, I have used it once on a rubber board. Nice thin grind and stellar profile, I just have too many 300mm chef knives! Comes with Saya. $200 AUD, $144 USD
- Konosuke HD2 240 western gyuto. Picked this up second hand here on KKF, gorgeous knife which lives at my main job, just gets used on light prep when my beater would be wasted. Has very minimal patina since I got it, again just find myself going for taller knives now. comes with Saya Listing I purchased from. SOLD - Konosuke HD2 Western Gyuto 240 $291 AUD, $210 USD
