Here's the latest, a 14c28n laser in my sab style profile at a length that should be a little more comfy for home cooks. This is the lightest gyuto I've made in a while but the POB is still nicely forward. It should be a really deadly little knife for onions and the like.

Here's the latest, a 14c28n laser in my sab style profile at a length that should be a little more comfy for home cooks. This is the lightest gyuto I've made in a while but the POB is still nicely forward. It should be a really deadly little knife for onions and the like.
- Blade: 230mmx52mm 14c28n (61-62 hrc) scotchbrite belt finish
- Neck: 19mmx18mm
- Handle: 138mm long, curly walnut, oiled and waxed
- POB: 43mm from the hande
- Spine: 2.47mm at the neck, 1.89mm at 12.2cm, .53mm 1cm from the tip
- Grind: flat to convex, right hand bias
- Weight: 122g
- Relieved choil and spine
- Edge: .16mm@1mm, .18mm@2mm, .44mm@5mm, .70mm@10mm Measured at the midpoint.
