So today my new Saji gyuto arrived. I definitely had to try it out with some decorative apples
And turn this 8lb salmon
Into marinaded sashimi
I cut the big bone with another knife that's not in the pics. I need to work on my chopping technique and angle. This knife feels different from my past knives. Overall sashimi taste 20/10. Apple is way tastier when cut with this too!

Just today I've received this book on Japanese cutting techniques. Really useful if you do a lot of sushi and sashimi. (I think I got the last one on amazon Germany, you should google for other buying opportunities).
