Myojin SG2 240 - $400 $375 $350

Bought new from Homebutcher a little while ago. Out-cuts both Kono Fuji’s I’ve owned. Thicker, more solid feeling blade vs. Myojin’s Fujiyama grind and still nice and thin behind the edge. Just something about the stainless nature is keeping me from loving it. This knife has prepped about 5 dinners at home and still has the original edge. You can see some of the original laquer/coating starting to come off in the pictures.

(I did recently pick up the 165mm petty from this line and it’s becoming the little engine that could in my kitchen.)

Beautiful blade and a great deal for a knife that is $600 new, wish it didn't have the SGII stamp though.
 
Yeah, the SG2 was unnecessary. Luckily it’s got Myojin’s convex grind to counter balance any visual faux pas!

I wonder if SG2 can be done in kanji like white or blue steels? That would have been a good pivot.
 
Sheeeesh been looking for a stainless 240mm workhorse, she's a beauty. Slightly above my price range though, glws.

These are great knives. The performance is spot on. Enough weight to feel like they're in charge, myojin grind that cuts so smoothly through even the densest stuff, and thin behind the edge for delicate work. I feel like this is one of those knives that could satisfy the one and done plan. I'm only keeping one stainless in my collection and that spot is already taken by a wedding present. Otherwise it would have been this knife!

For your Myojin. I was thinking an extra $50.00 to the deal. Definitely out of the blue. Thought I would run this past you.
