This is an awesome knife, it has a pretty unique feel for a sakai knife with a nice continuous taper from a thick spine to a super skinny tip. It is not at all what I expected it to be, despite the thicker spine and the weight with the ho wood handle it manages to feel super nimble and confident. The steel feels super crisp, and it has a ring or feedback on the board that is interesting. This one just overlaps with my other Nakagawas, it’s very similar but with a skinnier tip and slightly flatter heel that should make it perfect for anyone but me . The knife was briefly owned by austexchef and used in a professional kitchen, it has some light scratches on the blade face that I assume are from a knife strip. The edge came very nice, and I reset the patina and used natural stone powder to bring out the contrast in the bokashi finish. It is taking an incredible patina, and it’s just a fun knife to use! Unfortunately I really need the money more than the knife!
