Namikawa Uchigumori Jibiki

Hardness: 4.2
Speed: 5.0
Fineness: 4.8

1kg

15min soak in water

I tried some habiki from the same mine previously which was even faster and obviously softer and coarser. I was worried this stone might be difficult to use, however I was very surprised to find that it was incredibly easy to use as well as very fast and effective

I was amazed at how incredibly sharp the edge of my knife became, also I couldn’t believe how quickly that sharpness was achieved with such minimal work and effort.

In instances like this I have to pause and wonder why we don’t just follow the same progression togishi follow. I find that the quality\standard and the cost per gram to be superior to stones currently used for high carbon knives in our hobby

Mikawa is another stone that comes to mind, incredibly fast effect easy to use inexpensive and it has a huge range depending on how you prepare the stone

The stone benefitted greatly by being soaked, which seems to greatly improve the performance of stones that could otherwise be considered difficult or ineffective when used

Again mikawa comes to mind where this stone is consistently used incorrectly due to the fact that it must be soaked before use and if not used for period of time may need to be soaked for hours before use

This was an incredibly inexpensive low level jibiki, so I can’t imagine just how amazing high level habiki and jibiki must be able to perform.

Knife is Mazaki shirogami #2, all shots are under fluorescent light with no filters

I also want to make a note that this is the same knife that I have used for every single review I have ever posted on here
