I'm a huge fan of the Toyama 150 petty. Not currently in stock but JNS seems to restock fairly frequently.

It's so light and nimble it really becomes an extension of your hand. And as others have said, Yoshikane are great. I only have a 210 SKD gyuto but it won't be my last.

Congrats on getting your wife along for the ride. I've been trying to pull that off for years! 😂
