Greetings from California. I've been cooking my whole life (both casually and intermittently fine dining) and have always depended on non-precious workhorses, but recently fell into the rabbit hole of artisanal knives. A fellow member shared his stash of unicorn Takedas, custom Xerxes, Kamons, and the like. I've thus far leaned Japanese but we shall see. This is one hell of a drug...
