Hello, been lurking for a bit and figured I should introduce myself.

I'm not a professional cook but I do like to cook at home. I have about 8 to 10 Japanese knives and some German Steel knives that I use mostly on harder vegetables like squash. I can sharpen. I don't really enjoy the process but I can get a nice sharp edge.
Hanging out to learn a bit more about some of the knife makers and to temp myself to buy things I don't need.

Thank you both. In terms of sharpening it's a means to an end. I'd much rather be using my knives than sharpening them. Happy to have the skill but lots of things I'd rather spend my time doing.
