Hey all. I'm from Southern Missouri and I've been a Knife Knut for 10 years or so but mostly Case pocketknives. I finally bought a nice set of kitchen knives last year (Zwilling Pro) and am working on adding to my block. I decided to look for a place that could share opinions about that and this seems like a good placce for that.

Welcome.

Suggest you use your Henkels to develop some cutting technique and sharpening skills with kitchen knives. And enjoy.

At some point consider buying a Japanese knife to use that technique and skills with. Just one. It will be a game changer.

Wide bevels and actually thin behind the edge will do that for you. Day and night difference.
