Thanks for inclusion in your community. Seems I've found myself hungry for "knife school discussion" in particular wading through the confusion of the Japanese knife market, blade making processes, and material/finish options. Cooking and the associated equipment for the pursuit of it is a passion of mine. My wife gifted me a couple of the ZKramer carbon knives about a year ago which I am happy with but their quality only makes me wonder about the possibilities. Appreciated
