Hi,
My name is Nick from London, UK and I am an addict. LOL
Not really but have somehow caught the bug for Japanese knives. Just made an impulse buy of a Masakage Koishi Gyuto 240mm which I absolutely love. I first saw it a few years ago online and thought it looked so good that I had to buy. Fully appreciate it may not be anyone's first choice but it made me very happy. I laughed the first time I used it as ws stunned how sharp it was. I have some Naniwa stones that I bought after watching loads of sharpening videos on you tube from Burrfection and others. Very much a beginner but hoping to learn more here and also hoping to get some sharpening training if I can find a course in London somewhere. Have some German knives that aren't in great condition to practice on.
Looking forward to learning!
cheers
Nick
