Currently just use a naniwa 1000 specialty stone and a 5000 shapton ceramic stone, which have been doing a good job so far.

What should my next purchase be, though? Something coarser like a 400 grit, something between my two current stones or something finer for a finisher?

Just just buy a dmt/atoma plate to flatten what I currently have?

Currently using 3 different steels. Skd, a2 and xhp.

Any advice is greatly appreciated. Would like it to stay under 100 for the next purchase.

The 1000 grit is probably the most important stone to have and your 5000 grit is also a good finisher for kitchen knives.Yep,.I think I would get something to flatten the ones you have,Atoma 140 would probably be cheaper then a DMT for flattening though Jon at Japanese Knife Imports has a nice flattening plate on his website that will save you bunch of money. That's the way I would go.I'll see if I can't come back with a link and edit it on.

I have that exact same flattening plate and love it so far.
