A couple of weeks ago I aquired these two beauties from JCK.
Mr. Itou R2 Gyuto 180mm and Shiro-Kunimitsu Kurouchi Gyuto 240mm.
Haven't been able to bring them to the kitchen I work at since I forgot to get Sayas for them, and I wouldn't put them in my case without them. A matter to be solved soon, anyway.
The weight of each is just where I like. They didn't come as sharp out of the box, but I'll get a nice edge out of them with my whetstones as soon as they are in the restaurant.
I'm particularly fond of the Wabi-Sabi look on the Shiro-Kunimitsu since I'm a fan of rustic looks. Maybe the handle is not rustic looking but I'm a sucker for purple colors and I love how it mixes with the look of the blade.
Anyway, I'll come back with some feedback after I've put them into some heavy use.
You will have to bear with me though, since I'm not very well versed in the knives fanatics world.
