Hi folks,
Happy to be here! I've tried a ton of different western knives, but just fell into the Japanese rabbit hole over the last few weeks. After lurking here and reading the archives obsessively, I figured I should probably join the conversation. I love to cook - mostly things that follow the cycle of prep, sear, throw dutch oven into stove for 4 hours. This often involves making fresh pasta to go with it, and I've been starting to get into stir frying.
This place seems like a great wealth of knowledge and this subject seems tailor-made to hit all my dopamine receptors in a habit forming way. I can easily see myself accumulating way too many of these knives.
