I have a pair of Gyutos by Mert Tansu that are next up on the block.

The top knife includes the pictured saya (and yes It includes the pin) is one of Mert‘s customs. It is San Mai construction with a reported Blue #2 steel core and a soft iron cladding. The handle material on the Tansu gyuto is spalted maple, the saya is spalted tamarind. I’m looking for $925 for the knife shipped and insured to North America. For international purchasers I’ll pay the first $25 of the shipping with the purchaser paying the balance. Here’s the specs.

Blade Length … 266mm
Edge Length … 258mm
Depth at heel … 51mm
Thickness at spine … 4.6mm at heel … 2.4mm mid blade … 1.6mm 1” from tip
Weight … 222gms

The second knife is one of Mert’s early run production knives. It’s San Mai construction reportedly using a 1095 water quenched steel core and soft iron cladding. The handle material is Bocote and African Blackwood. I’m looking for $525 shipped and insured to North America. Outside of North America I’ll pay the first $25 of shipping with the purchaser paying the remainder. Here’s the specs.

Edge Length … 227mm
Depth at heel … 50mm
Thickness … 3.0mm at the heel … 3.0mm at mid blade … 2.5mm 1” from the tip.
Weight … 228gms

I don’t recall using either knife very much, but they are used knives and are developing a patina that I find very attractive.

Look like it’s finally time for me to get my cataracts fixed! KillerL observed banding on the HVB blade. Banding on a monosteel? Hmmm … yup … there they are. With help from marc4pt0 and Mert himself, I’ve confirmed from the maker that the blade is San Mai with a 1095 steel core and soft iron cladding.

I hope this clarifies things.
