I'd say that if there's a chef that you like you could check their IG, or even get super old school and buy some books. Though that's going to work better for current and higher end stuff.
 
Yeah I love IG food pr0n as much as the next guy but a lot of dishes use these elaborate layering schemes and I can't always get a sense of how they were built from the ground up, as it were. So I'm wondering if there are tutorials out there that a home cook could access.
 
Art culinaire magazine used to be a favourite of mine in culinary school. Quarterly issues, large variety of featured chefs with recipes, plating, techniques and great photo quality. Haven’t read any since 2014 but always enjoyed them
