Regretfully for sale. I'm a little backwards at this time. We do some contract/food processing. We have in use fourteen Spare Apex Knives. Some of these knives have several hundred hours on the boards in a commercial setting..They have been very productive and very, durable, ergonomically friendly, minimal food striction. And they take and hold a keen blistering long lasting edge. Sorry just wanted to share a little background.
The knife I have for sale is from my personal collection and has seen very minimal use, maybe a couple meal preps .Some slight patina,never sharpened or stropped still very sharp. Well balanced slightly forward very kinetic mid weight presence in the hand. High bevel aggressive distal taper thin behind the edge extra height. Fit Finish very nice.

Hello since we switched to powdered or super steels I sharpen every thing including the Apex Ultra on diamond plates. That's just my preference. You can easily get this steel under 100 on the Bess scale

Spåre’s Apex Ultra knives are monosteel, I believe. Isasmedjan’s AU is sanmai.
