Hi guys,

Unexpectedly this one is available.
185mm x 53mm nakiri in Silver Fox 100 stainless steel. Hardness 61HRC. Rounded and polished spine & choil. The handle is made from tamboti wood and blackwood. Convex bevels sanded to 600 grit.

Overall length - 331mm
Spine - 2.4mm to 1.5mm
Edge - (midway) 0.97mm at 10mm, 0.4mm at 5mm, 0.1mm at 1mm
Handle length - 130mm ( 20 x 24.5mm front, 21 x 26.5mm back)
Balance point - at the makers mark

Asking £235 (circa 295 USD) including shipping to US/ Europe and PayPal fees.

Although having almost the same knife from you this still makes me itch.
Next year i will try one of your stainless knives. I wonder what you would recommend SF100 vs AEB-L. Do you still work with both?

Very nice handle by the way. Refreshing to see a short ferrule executed well.

I have one knife in each and can’t say I notice much of a difference, although they’re from different makers. They’re both great steels with solid edge retention and easy to sharpen; I haven’t noticed any micro chips on either but they’ve only had fairly light use and not needed a 2nd sharpening yet.

My understanding is that SF100 and AEB-L are basically equivalents with SF100 manufactured in the UK so it’s more readily available to makers there.

Anyway, love the specs and price on the nakiri - GLWS!
 
Yes, the composition of both steels are almost identical. Performance wise, it is very difficult to distinguish between them. The edge retention is again very similar. Both are tough, you shouldn't have any issues with chipping. Thanks
