230mm carbon steel gyuto ( 52100 steel at 62HRC ). Forced patina finish. Rounded/polished spine and choil. Convex bevels.

Cutting edge 230mm
Overall length 383mm
Blade height 54mm
Spine 3mm / 2.16mm / 0.7mm
Edge 1mm at 10mm / 0.55mm at 5mm / 0.1mm

The handle is made from a stabilised Karelian birch with herloom fitted copper ferrule.

Asking 310USD including shipping to US and Europe.

Used to think that but payed way less import than I thought when I ordered from Michael.
And well, shipping is included anyway.

Shipping to the UK has become silly in price though. 30€ or so last time I checked.

I have to say I also like the new profile a lot!
