Iron clad Hitachi blue from a brilliant knife maker. Love this knife, but gotta make room for something new. Never been sharpened. Seen a leather strop only on one occasion. Cut dozen pork loins and 6-8 tuna steaks. Razor sharp, bit of pretty patina. Pics are from original post and couple from now.


205 mm long (37 mm tall at heel) in iron-clad Hitachi blue steel, copper heirloom fit cap, and padauk handle.

Reduced to $750 which includes shipping CONUS. Price drop from $900. Will consider trade for US and Euro makers.

I don’t solder my bolsters, so there isn’t a metallic bond with the blade. I use marine grade epoxy during glue up, which coats the inside of the bolster/where it meets the blade, which effectively insulates them (I hope!). I haven’t heard any cases of galvanic corrosion on these yet!
 
That’s a beauty. Do you consider it a chef or more of a slicer?

It’s kind of a hybrid due to heel height. You can use as a slicer/small chef. It’s super light and agile and of course it’s very sharp. I love it. I just need to make room for another knife I just got my hands on. But if don’t sell it I’m okay with that too because there is nothing I don’t like about it.
