FOR SALE - NEW & UNUSED: Hitohira FJ VG-10 "270mm" gyuto. Beloved at Bernal Cutlery because of superb heat treat and grind. Not your grandfather's "VG-10". A laser, but a tough one.
$170 shipped in Continental US. Happy to do bundle deals with any of my other knives for sale. Not interested in trades. Price is firm.

Any chance we can get a better choil shot? But hard to tell what we're looking at here.
 
This image unfortunately doesn't tell me much. Not that a choil shot is a perfect way to tell how good a knife is but it's used as a base point that many use to buy knives. The non ideal choil shots may be a reason some of your knives aren't moving. Here's a good choil shot from carbon knife co. The idea is to get it as straight as possible without showing the edge of the knife. Check out other choil images at Carbon Knife Co- Japanese Chef Knives & Accessories if you want some more examples. Using the sky as a backdrop is great because it provides some great contrast.

Hey that's pretty good! If you're willing to ship outside of conus (just to Canada) let me know because I'm quite interested!

By the way I'd really appreciate seeing a full spine shot similarly to the choil shot. It helps take a look at the taper of the knife especially towards the tip. Thanks!

How’s the heat treatment on these things? Similar to something like Hattori?
 
It is supposed to be really great for the pice point. This is the main reason, along with the grind, that Bernal Cutlery even carries them. They just are not run of the mill VG10s. I do not know the exact Rockwell hardness.
