Got this when I first got into kitchen knives. Doesn't get much use now aside from really hard veggies. Wanted to see how it would look with a without the hairline finish a few months ago but had a hard time getting a good kasumi due to my lack of skills and the stainless being much more difficult than my carbon knives. Got rid of all low spots and thinned a little but the polish was not getting to where I wanted after 4+ hours so I just went over the whole thing vertically with some high grit sandpaper.
Cuts great and there's still a lot of heel height left. Torched the handle too. I still like the look better than the original but like I said I just never really use it anymore. Nice, shiny but scratchy finish. Could turn out really nice in the right hands or just used as is.
