Shiro Kamo ~ $260 $230
Great 240mm gyuto, has a fair amount of height and as such, good knuckle clearance. Upgraded the handle from the KNS.NY standard teak and buffalo horn to ebony and buffalo instead. Paired with a wengewood saya upgrade. Has been honed once, never sharpened. No visual imperfections, cuts great, is very lightweight in the hand and is enjoyable to use. Selling it because I haven't used it in some time and I feel like someone else could make better use of it.
Hinokuni Shirogami #1 Long Nakiri ~ $140 -> $100
Also is in great condition. Got this around 2 weeks or so ago as something to review but have no real need for it. Is a relatively front heavy knife but overall feels comfortable to use. Has seen very minimal use and has never been sharpened. Lacquer has been removed below the kurouchi line however the lacquer on the kurouchi is still intact.
Sabol N690 210mm Gyuto ~ $100 -> $70
Bought originally from burrfection back in the winter. This is a Sabol Brothers x Ryky collaboration in celebration of Olympian Joey Mantia. Sabol Brothers are a knifemaker pair from Slovakia and these were made for Burrfection. Handle is an olympic celebration handle with olympic color spacers on a white handle background. Cuts well, F&F is really good, there is some taper from heel to spine and is comfortable to use. Edge retention from my limited use of it seems to be good as well. Overall has seen minimal use and am looking to sell it to someone who will use it more.
Hatsukokoro Kumokage by Muneishi Cutlery 180mm Damascus Kurouchi Bunka ~$110 -> $100
Bought initially from KNS.NY early on in my Knife Journey. This is a very beautiful knife that cuts well and has a decent F&F for a knife made in Tosa. Damascus has a slight bit of pitting/rust on it, there is also scuffing along the damascus along with scratching from a sponge. Has seen some decent mileage from me and has been sharpened 2-3x. Is paired with a teak saya along with a ebony and buffalo horn handle. Haven't really been using it recently so I'm looking to offload this for relatively cheap for someone to use more. Is in good condition and takes a great edge.
Kyohei Shindo 210mm Gyuto ~ $90
Bought initially from Tokushu Knife. Extremely high performing knife with a deceptive choil (yes it looks wonky) but the rest of the knife is free of warps. Lacquer is removed and there are some mild scuffs near the tip but otherwise the knife is in excellent condition. Glides through onions and dense foods. Is paired with a knife sleeve from Tokushu and has a keyaki handle with plastic ferrule. Edge retention has been great and is surprisingly comfortable to use. I have an excess of gyutos and am looking to get rid of this one just to free up some space.
