Hello, I don't really use 210s anymore so it's time to let this go.
210 Tetsujin b2 Kasumi gyuto. Needs no introduction. Sharpened 2 times, never thinned.
Taihei wood handle with buffalo horn ferrule.
So this knife had an incident with the green side of a sponge and the kasumi finish was completely removed. I have since (poorly) put the blade through a sandpaper progression and finished with suita powder. The kasumi looks pretty good, but there are a lot of stray scratches that I didn't fully remove when going up grits because I was lazy. Also some scratches on the ferrule (reminder to tape next time). The knife is currently pretty dull, and I can sharpen before shipping off if wanted. It still actually cuts certain foods great just because of the awesome geometry. Tried to capture some of the scratches as best as I could on camera. But ya overall, it's just cosmetic issues, as you can see in the choil shot, the knife is extremely thin- Myojin does great work. Am pricing based on all the cosmetic scratches.
