I just got back from a trip to Peru. I brought back some great memories. A lot of food memories. They eat a lot of grains. We had a great rice with olives, some fantastic quinoa dishes.
There was a “fried rice” made with fresh veggies and quinoa. It blew me away.
One super simple dish. For breakfast I had a big bowl of quinoa porridge. Very similar to my beloved Chinese rice congee. It was my first dish I made when I got home. So simple! Ate a big bowl and was full till lunch.
I’m gonna eat more quinoa for sure. I’m not a fan of the ubiquitous quinoa salad.
Other notable foods. Legumes. I hate lentils and they converted me with a jungle river side bowl of this mashed lentil soup. It was very plain, but so great and satisfying.
I asked a local and she told me she eats meat 8x per year!
Quinoa is so cheap over there! Hell, they invented it.
Tarvi! Another legume they showed me. It is a super super food from ancient Inca times.
