Hello all. Have had some Global knifes for years which over time have seen thier fare share of battle. Both from wife but certainly also my children using directly on our granite kitchen table 💪. Few years ago I went on and got me a Myiabi Birchwood - Actually for me an ok knife. Since then I have had friends telling me about their blue and white steel knife and after trying one I was sold. So after a lot of reading I pushed the button on a Konosuke w#2 WT 225 today. I really like the ability for the knife to get some personal patina. Also the knife having quite some height for a guyto I wanna start there and not yet ( perhaps never ) get a santuko / Bunka. Hope I have not missed the mark with this knife . There were sooooo many options and opinions from my friends I just had to make a decision:). Anyways TL;DR I’m here to learn more about this wonderful world of knifes.
