I would really like to get a good honesuki between 160 and 180 mm. I have no experience with single bevels and I thought this might be a good intro. I'm not looking for a "bang for the buck" knife, I want to get the best knife that I can. I would appreciate any suggestions very much.
 
Talk to Jon at Japanese Knife Imports. Very cool stuff. Got mine from him.
 
I don't think he has it in stock right now, but Jon is the only vendor I've seen in a while with a true single bevel honesuki. I would like one myself in the future, and that's who I'd ask.
 
Yeah. I've been contemplating a Heiji for some time.
 
Out of curiosity, what makes a single bevel honesuki a better performer than a double bevel? I never explored honesuki fully, though I still have one, a single bevel, Watanabe (or whoever made it).

EE has a 150mm or I know someone that could make one for you.:biggrin:
