Hello,

what is actual the best ~270mm Shirogami Yanagiba for ~150€/175$?

I've already looked at the following:
-Tojiro 270mm Shirogami (~150€) Tojiro
-Nakagoshi 270mm Shirogami (~140€) Nakagoshi
-Yoshihiro 270mm Shirogami (~150€ + Shipping and Tax) Yoshihiro

Thanks

Avoid Tojiro, there’s reason why it is cheap, I found 3 different low spots during my first sharpening back then with my 270mm Tojiro Yanagiba, doesn’t look pretty, unless you have patience to flatten the whole bevel.

I bought the Yoshihiro now. I think 177U$ include the wooden saya and shipping costs is a very good price. I have to pay ~50$ extra for tax but never mind. I had the knife a few years ago and I still regret selling it.

Doesn't matter now, and it's not Shirogami, but just to say - I got one of the very entry level 270 Fujitora yanagi recently from K&S and was really quite impressed.

I then ordered another similar-looking knife from a different vendor which was marginally cheaper... no comparison whatsoever. Low spots are always going to happen I think, but the K&S knife was just a billion times better.
