I've got a guy on the line looking to gift a chef a deba under $250.

Wa handled, right handed, carbon or stainless clad carbon, 165-210mm preferred, for a professional working chef using it for fish butchery and probably some other protein breakdown tasks.

I've been on the lookout on the forum for him but debas are usually a little pricier here. I'm a lefty and have never been able to use a deba or any single-beveled knife with any kind of success, so I've got no good ideas here. Help me spend my friend's money!

Thanks.

Have you checked out Fu-Rin-Ka-Zan at JCK? I bought a Masamoto KS deba, 180mm, but I’d have preferred a 165mm in hindsight.

That USD 250 limit is really about where the better known higher quality debas begin. Below that there are plenty of "workable" debas, White, Blue, Yellow, SK5, etc as well Stainless but usually with plastic ferrules. There are probably some higher quality debas that fit the bill but I suspect a good search may be required.
