i have on a couple of occasions owned a similar set as these along with the belt. wish I still had them, wish someone still made the scabbard. Mine weren't as clean or pristine as this set. absolutely beautiful.
 
seen a set on ebay go for about $650 last year. but it was a little beat up and the blades were much more worn.
 
That's a trussing needle for birds to sew up the cavity .
thou it could be used for larding but these work much better.

What's the date on that? It's beautiful. If there were a Chef knife museum(and there should be) that would be a sweet piece of the Sab exhibit/gallery.
 
Dating on this is not exact it was made in Nogent-sur-marne France before the current nogent knifes were born so how well the the knifes looks i say 1875-1900
could be earlier .

oh and the cost at auction is.... $840.
 
With the super saya there it's like they all combine powers to form a mega Voltron of awesome! Very nice.
