Hi all, new member here. Interested in learning about japanese knives, getting advice on which to buy, learning to sharpen, and maybe eventually buying/selling secondhand. I have a few japanese knives already, but I don't know their makers. And also, unfortunately, before knowing any better, I had them machine-sharpened. So, I plan to have them sharpened by an asian knife specialist to give them a good edge before I take over for future sharpenings.
