The Bunka SG2 is the result of a collaboration with the Suncraft forge, where the blade was made from powder steel with very high hardness in a forge in Japan. The knife has a perfect design and a thin profile, so it is recommended for all professional chefs and lovers of sharpness.
The blade is 16.5 cm long, so the Bunka SG2 is an extremely comfortable and friendly knife for home use as well. The thin profile of the blade (1.8 mm) and hard powder Japanese steel ensure a winning combination of smooth and long-lasting sharpness, accurate and precise cutting and comfortable and fast work. Due to the powder-coated steel, the knife is unique for use in home kitchens, and professional chefs who want a shorter, more agile and versatile knife will also be happy to wield it.
At the Suncraft forge, the knife was assembled from San Mai construction in SG2 powder steel, one of the finest stainless steels. The HRC of the knife is 62-63, which means it will hold its sharpness for a long time, yet the knife is very easy to resharpen and maintain.
The choice of the handle for the new knife followed the same logic as the steel of the blade – universal and easy to maintain. The beautiful, dark brown, octagonal pakka wood handle fits perfectly in the palm, regardless of whether it is held by the left or right hand. Pakka wood is made from a combination of laminated wood and epoxy resin, it is durable and does not get dirty easily.
The price includes a Saya (wooden scabbard to protect the blade), which is an important accessory to protect the blade from external damage, scratches and plays an important role in maintaining the sharpness of the knife.
