Coming out of New Mexico Prefecture, ShiHan 210 K-tip, but with a legitimate gyuto profile - the clipped tip is really just for looks.
It has the OG 52100 core, stainless cladding with the gorgeous cloud cladding line. I find it quite beautiful. Has the OG grind as well.
There's no reason I don't use this one other than I don't. If it doesn't sell, this or the Denka will become a grad gift for my nephew. Never sharpened by me.
Also has the OG ash edge guard. The edge guard lost one strip of cork along the way, and I replaced it with a thick tagboard liner. It holds the knife totally securely.
