1. Shig KU santoku. You know the deal. Comes with black cocobolo burl handle with marble horn from jobone. With the custom handle I am in around $500 total on this guy. Will ask $450. Been used 5 times or less. Touched up the edge once as I wasn't crazy about the factory one. Removed some patina and used some Tosho kasumi powder. Think it looks beautiful.

2. TF Denka 210mm. This one came with a whack handle install and a meh edge. Fixed that, and did a "rough" kasumi on it (I don't have the best stones for TF stainless). Grind looks nice, even, and thin. But that is to my eyes. Check the choil shot. Used probably twice. Expect TF aesthetics standards, there are some scratches on the blade road, but I think my kasumi makes it look much nicer. Comes with an ironwood handle I am gaga about from Joe, so let's do the pricing like this: With the Ironwood handle I will say 575. If you want it cheaper still, I will take $50 off and install a nice ebony handle so total would be $525 (I have a few so I will look what works). If you want no handle we can say $475.

You got dimensions/weight on the denka?
Denka is about 215mm actual edge, and just under 51mm tall. 6.5 ounce (the desert ironwood is pretty dense and heavy so can easily reduce that with ebony or another handle if desired)

Shig is 172mm edge length, about 48mm high with a 6.8oz weight (thiccc sanjo neck on it)

So, a couple things. First you can wait up to a year for your knife, (yes sometimes they will be much quicker of course, but it seems on average you are waiting a few months). You have to take into account the wild range of TF grinds. I'd say it sounds like at least 50% chance of getting a dud, that's why retailers like Epicurean edge charge $719 for one, they scrutinize quite harshly. This one is fantastic, even and thin. On top of that I am providing a little bit of better than new value by giving it a kasumi which is a B**ch to do on TF stainless cladding, and giving it a better out the box edge.

So to summarize, $75 extra for no wait time at all, not having to pay the wabi sabi lottery, added kasumi and a better than factory edge. To me at least buying a TF, I know I would pay that extra compared to direct. I just checked it is $395, and I might be wrong but might need to pay import tax ordering direct from japan? And if you get a dud you will be spending money fixing it, you won't ship it back to japan, and no one will buy it used unless reground. The desert ironwood and marble horn is the best of the best and worth around $150. I also have a ringed gidgee worth about $125 and an ebony worth $50ish that I am offering as a package too.

However, if you feel pricing is off, you are always free to make an offer. Worst I can say is no.

Hope this all makes sense to you. Also it is usually advisable to PM if you think pricing is off, price policing is usually seen as a no-no around these parts. I don't mind too much, but just a warning because others do. Just a mention since it looks like you are newer to the forums.

Not much of a flat spot at the back, this is a nice curvy boi.



Also here are some more handle options:

This is the ebony handle mentioned. Super nice with marble horn. As mentioned $525 with this one, and I also have this super KnS ringed gidgee double horn triple silver spacer. Let's say $545.

Summarizing for the TF to make it clear:

$475 no handle
$525 with ebony
$545 with gidgee
$575 with ironwood burl.

Not trying to be a Debbie downer but you can get a new 210 deka on teruyasu.net for under $400... the yen is very weak currently.
Just want to say, totally agreed on everything @jedy617 said. I just received a 210 Denka direct. I was charged $30 shipping to the US, so add that in. I was lucky to get one with a good grind, but there certainly seems to be a lottery aspect to that. I also swapped the handle out on mine (the standard ho leaves a lot to be desired beyond the inevitable wonky install) and the ebony from them is outrageously overpriced. I'm not looking forward to refinishing the bevels on mine (or maybe I am, but I'm a glutton for punishment). In the end, I think this is a GREAT deal. I purchased mine back in June when the Yen was a little higher, but with the custom handle I'm into it for about $515.

Thanks man! I spent about 4-5 hours on these bevels, and I'd still call the work average. I need to find the perfect stone that works well putting a kasumi on it...but whatever it is I don't have it in my inventory lol

A 210mm Denka Gyuto with the base handle is now 77,000 JPY. With shipping to the US it's now $557.

Wow you are right they did! Must be to counteract the sinking prices of the yen. You heard it here folks buy my Denka for a good deal!
 
I've been emailing with them for months and someone over there said it was more due to rising materials costs. 🤷
