Kurosaki AS 270mm gyuto. Removed the KU long ago, now has something inbetween nashiji & kasumi finish. I scratched up the handle a bit with coarse sandpaper so that it has better friction and is less slippery (see pic). Also have thinned the grind a good bit, especially towards the tip. Rounded all rough edges on spine & choil as well. $235

Just curious, what did you like about the Yoshikane that made it your best gyuto? I've read it still sticks on root veg and it doesn't register as a thin laser to me.

I'm unclear here, have you used one yourself? "laser" is a word that is used somewhat ambiguously on KKF so I wouldn't call it one myself. It is super thin behind the edge. I have never experienced any sticking. It has the amazing food release and drops effortlessly through veg. It goes through large root veg better than any other gyuto I own. As with all handmade knives, there is going to be some variance knife-to-knife. This is the only Yoshikane I've used. It definitely cuts better and is thinner and lighter than the 2 shigefusa gyutos I've tried.

I've been trying to dig up as much info about the knife as I can since I'm looking for a knife that falls through produce like you mention and the Yoshikane ticks a lot of boxes. The one thing that made me hesitate was reading someone say it may wedge a bit in tougher veg but have also read a lot of great things about them.

yoshikane knives are a really good value. Great taper, great grind, great fit and finish, amazing steel. They are workhorse knives so they thicker than some but they have expert grinds that are amongst the cleanest I have ever encountered. Everyone should try one
 
What are the measurements on the Wakui? Is this stainless or carbon clad?

Wakui is 51mm tall at heel and 277mm long. Stainless clad.
 
I am willing to ship internationally for another 20USD. That said:

In the past on KKF I've shipped internationally and had success but also there have been two instances where the package got delayed a few weeks and the buyer got fined a small fee by their country's customs. Also due to the pandemic, I believe all international shipping has been considerably slower (especially overseas shipping).
 
I've had a book shipped express waiting in customs from Canada since the 8th, however orders from JNS and a package of snus both came on time. There's no way to tell with international right now.

*This knife was sent back to me by the buyer who noticed an overgrind on it about 2 inches in from the heel. Embarrassingly I had not noticed the overgrind in the few times I'd used it. I did my best to remove the overgrind but realize it goes up into the knife and is not something to easily get rid of. I have lessened the overgrind which has consequently thinned the knife I tiny bit. I didn't take the time to even out the polish but it is relatively smooth and is currently at about 2k while still having some scratch marks from lower grits. You can see the finish and remaining overgrind in photos below. Please don't buy this knife if you are a collector or fancydaddy who has 16 knives and is a home cook. Please buy this knife if you are a professional with an interest in performance (this knife cuts the pants off the 5 shigs I've tried and as I said before is perhaps the best performing gyuto I've ever used).
