Hi all,
Here Im offering for a sale my shigefusa 300mm yanagiba with Marko custom handle. I bought the knife new, years ago the knife has been used on only special occasion at work, and it still in pristine condition. Im a sushi chef and strictly used this knife for slicing sushi/sashimi only. As you can see the picture it develop a beautiful natural patina, and I only sharpen the knife with 5k grit and 10k grit chosera stone once in a while. To be honest with you its more like a touch up rather than a full sharpening session. As you can see on the picture, the concave back side of the blade (urasuki) still like new condition. I did try my best to protect the lifetime of urasuki.
The handle is beautifully made by Marko long time ago. It has a very nice taper, high grade ebony wood, sterling silver both on the but cap, and a thicker one on the ferrule. Its one of the most beautiful yet elegant handle that Ive ever seen. His craftsmanship is top notch and I believe a lot of you know that already.
Sadly I have to sell this precious knife to fund my project on other hobby. My other reason is also because my current sushi bar is much less glamorous, unlike my old job that I had a big and long 48 inches cutting board for myself my working space now is wayyy smaller than that. My second favorite yanagiba would do the job for now because its smaller/shorter, and frankly speaking we have a long history together, also it has a sentimental value.
I owned many high-end single bevel knife from hayate, suisin, masamoto, aritsugu, nenohi, and due all respect in my opinion, yanagi knife couldnt get better than this shigefusa. The crisp cut, finishing, perfectly straight blade, geometry, sharpness is above everything. The handle from Marko also makes it perfect. The silver spacer and the dimension of the handle perfectly balance the weight of the blade. Whoever buy this knife, youre in a treat :thumbsup:.
$680 shipped and insured to CONUS, Paypal only. I dont have the original box, but the big plus note is that Ill give you the saya. Its not a real ebony, but a regular one (poplar?) that I dyed to match the color with the handle.
