I'm putting my Shigeki Tanaka gyuto up for sale, because it does not see the amount of use it deserves. Any potential buyers should be aware that this knife has undergone a pretty massive transformation since it was first purchased. It was my first Japanese knife and after scuffing the blade when sharpening, I progressively altered it more and more to bring it from a scuffed ugly duckling up to something that in my opinion looks as good as it did when it was new.
The knife was originally a Tanaka K&S Special, which was basically the standard stainless clad ginsan knife linked below with an ebony and brass handle.

In my opinion, the knife looks and performs better than it did when it was new, but it is important to keep in mind that this is almost as much a Martyfish knife as it is Shigeki Tanaka knife due to the modifications. It's very thin behind the edge, with a great, user friendly steel for a price approaching a mass produced blade. I think this would make an excellent beginner's knife or a great addition to someone's line-up if they are looking for a bargain gyuto.

- The nashiji finish has been completely removed
- The vast majority of the low spots in the grind have also been removed
- The knife is thinner behind the edge and thinner overall compared to when it was new
- The choil has been rounded and polished
- I have the blade a subtle kasumi finish
