Shihan 245x56 Gyuto with an ebony handle. 271g

I have a beautiful k-tip A2 gyuto with an ebony mono handle up for grabs. The steel is heat treated using Shehan's new setup. I was told by him that the new setup resulted in the knife being harder than his older knives, so that might be a pro or con depending on what you're looking for. I had it sent in to shehan for some thinning behind the edge, so the knife is a little thinner BTE which leads to some great performance. It's also got some very nice alloy banding going on. Not the typical swirls, but definitely some unique streaking going on.

It hasn't been used too much, just 2-3 food preps mainly cutting meat, so you can see there's a bit of patina along the edge there. I included some close up shots of those areas as well.

It's a great performer with nice heft that gets nice and thin BTE. It's quite well balanced probably due to the heavier ebony handle on it. Unfortunately, I don't reach for it very often, so better to have it go to someone who'd use it more.

I have an a2 with Shehan’s new setup and have had zero issues with edge stability even after thinning. It’s such a great all around steel.
