I don't know how Shiraki fixes his handles but the temperature is an important factor, keeping the handle in water at 85°C for 1 hour should allow it to be removed. I remember a Mazaki from which I could not remove the handle after immersion for one hour at 75°C under vacuum, after direct immersion for one hour in a thermoregulated kettle at 85°, i take the handle off without difficulty without the horn being altered.

Have tried almost all the methods but haven’t try direct immersion. Thanks for the idea, will try it tomorrow!

FWIW … this is the kanji from the tang of my Gyuto reported by its seller to be made by Shiraki. I would only represent it as made at Shiraki Hamono, possibly by Shiraki himself.

FWIW … this is the kanji from two knives I own which are certified as having been made by Shiraki himself by a maker who worked personally with Shiraki.

The uppermost knife in the first picture has kanji on both sides of the blade. The second picture above is the kanji from the second side of the blade.
