Hi Everyone!,

I'm a home cook that's mostly been using German steel knives. Recently got into Japanese knives and picked up a Yoshimi Kato AS 210 gyuto and a Takamura SG2 santoku. Loving the cutting experience so far. I hope to learn more about Japanese knives!
