Congrats! The 210mm version of that was my first j-knife ever.

Nice! I have a high polish version 240mm from K&S with a custom handle I put on it’s one of my top gyutos. Kamo is great. Also have the tall nakiri which is another keeper I will never sell.

So, I never get lucky with these awesome knives being dropped in online shops, but boy did I get lucky now (still don’t know how this was available for me) and it checks so many boxes for me:

Arrived today, and have yet to test it, but I love how it feels in hand so far. Very light (180g) and nimble and reminds me somewhat of my Takadas (just a tad heavier and just a little stronger/less continuous taper), and a bit more height (54 at heel).

If you want less reactive mono all the way. Wrought is more like iron clad.
Mono will be significantly less reactive. Here is the carbon gyuto, it took a lovely blue/purple patina very quickly and then settled down to pretty mellow after that. Noticeably lower maintenance than my ironclad knives. I also "forced" a meat patina on this one

from Bushman Survival, UK, here is my Small Seax, this was a design used by the Anglo-Saxon and the Norsemen from 400 to 1400 AD. Very heavy blade. 9" in total length with a 4" blade, with brass fittings, and an Olive wood handle. Very pleased with it. What you see on the grip my name in a Rune.

Lucky and ecstatic to pick up my first Tsukasa Hinoura-san's Unryu Mon, Santoku 180mm, new! Just oiled it and will be in rotation with my River Jump 240 gyuto and other knives of various artisans.

Finally managed to snag a Takeda from Miura. 165 Bunka (was listed as a Santoku) not used it yet.

Wanted the 270 Kritsukie, but had to settle for this, a Nakiri or nothing. Aside from the tip, not really sure if this differs from the Nakiri, and is the Kritsuki just a long Bunka?

At first look quite impressed with the fit and finish, expected it to be a bit more rustic, but its even straight.

Watch out onions, I'm coming for you.
