Fellipe is my actual favourite knife... curious to know how are you liking it. Beautiful btw!
This is my second one from him, so I kinda already knew that I was getting an excellent knife, as I love my first one, too. This one is similarly great. I've only used it once, but it cut everything with ease, is fully polished, looks great, what's not to love? I think Fellipi is an underrated maker 👏

Wat Pro 273x58, 257 g. Really pleased with this one after first cuts. Significantly smoother cutter than my KU Toyama 240 that kinda had me questioning the KKF hype. I get it now. Shout-out to @timebard for being a bad influence and sending me down the big boi path. Gonna be a lot of fun for fall/winter root veggie season

They're all really good, but the 270 is the goldilocks one...

Hi guys!
We had a small fair here in Denmark arrangedby Tetogi.
Great event where Jonas from Isasmedjan and Tobias from Heldquist attended. Lovely guys!

I ended up with these guys:
Gorobei x Izo nakiri
Cygnus dama gyuto
And a random Heldquist hammer 🤣

STOP!!
Hammer time....

Something a little different (and way cheaper) this time!

I had a Moritaka Blue #2 190mm cleaver, and while that knife ABSOLUTELY kicks ass, I use Gyutos for the majority of my cutting. I made the decision to sell the Moritaka to free up Gyuto funds (I have four Gyutos from Western makers currently en route), but I still wanted to own a Wa handled cleaver.

I came across this guy on Tokushu's site and I figured for the price, it was definitely worth a shot. I had them replace the stock handle with one of their Cypress & horn offerings, and I think it compliments the blade really well. The handle also smells like Eucalyptus, which is a welcome bonus!

After unboxing, I shredded some Napa cabbage and thin sliced a big fat carrot. It performed well beyond its price point at both tasks. Definitely not as effortless a cutter as the Moritaka, but given the rather significant price difference between the two, I have zero complaints. It's also much thinner and lighter than the Moritaka, so it obviously isn't going to fall through food in the same way. This blade is definitely punching well above its price point.

"Did you buy another knife?!" my wife exclaimed.

"Yes...but just to try out to see if I like it or not", I sheepishly replied, omitting the fact that I actually bought two knives. And also omitting that I have two still hidden in the closet. And two more that are already ordered....

Gonna need a comparison! I've been very curious about the Wakui WH

Not great at side by sides but maybe this weekend I'll try them both out against Shihan and the Kipp that I have. Those are probably the most workehorsey knives I have (Okubo is sans handle for now) but I can already tell that the Wakui is gonna be a monster. JNS has it listed at 327g
