Wanted to show off this unique Ukranian gyuto made by Epsilon Forge aka Eugene Butmerchuk. He's a gifted knifemaker that I discovered by happenchance. I saw his IG and knew i needed to try him. I love a good industrial/brutalist vibe.

His attention to detail is really fantastic. Check the pics and IG out. And it's a performer too, great convex laser that's comfortable and athletic. Crowned spine and choil, consistent blade finishing, and a fantastic tip.

Eugene was great to work with. With the war raging, he had limited access to his shop but kept hammering at it.

I don't want to ramble on too long. Check Eugene and Epsilon Forge out. He's still reasonably priced too.

Falling firmly into underrated and undervalued, a stone polished wrought clad 26c3 across a whopping 63mm of height and nail flexing across the whole edge. You gotta check out guillaume nadeau. Just absolutely insane craftsmanship for the price
