The crazy purchasing week continues with a very unnecessary polish of a Wakui seiryu. I think this is the thinnest sanjo knife I’ve handled BTE, very thin tip for Wakui, and rare to see them ~56mm like this. Kind of a brainless matte high contrast finish, but I couldn’t stand the diagonal grind marks and the sandblasted finish.

Awesome work.

Have you found any impact on performance/stiction with the more refined polish at all?

Kind of want to do this with mine once I have some spare time.

Love it. I got the first one of the batch with kanji on the tang and sharpened by Maksim. Just curious whether yours is sharpened by Maksim or Wakui. I've asked Makism and he said it's the same as mine but I doubt since it has sandblasted finish. Also the grind seems to be a tad bit thinner bte than mine.

Not in particular unfortunately :( my personal experience is that almost all finishes >600 grit are slightly more sticky, so the shiny core steel which is near 3000 grit isn’t amazing for food release where the kasumi parts are slightly better. Patina fixes this issue though and IME higher polish means more vibrant colors.

This guy took me 6 hours! B2 usually isn’t as bad to polish but this batch actually feels a bit harder than previous wakuis I’ve tried:

edit I misunderstood, hardent’s AU took me 8 hours, but I don’t think I did a perfect job

This one definitely is wakui sharpened, it has the classic diagonal grind marks that he and mazaki tend to leave where maksim sharpened and polished stuff don’t

Top: Toma Fenes honyaki gyuto/pizza wheel set - Just got it so not much use, but the gyuto has been fun so far and the cutter does its job quite well
Middle: Docsmith Honyaki - Had this a week or two now, used it for most of my prep in that time. Pretty lasery especially at the tip. Heel height makes it feel like a Chinese cleaver for close up tasks like slicing garlic. A bit sticky, but not really an issue, and hard as anything. I've done some admittedly dumb cuts with it that I thought might turn the edge or even chip but it still looks perfect.
Bottom: Sun & Stars Oroshigane petty - the F&F on this thing is just perfect. Rounded edges anywhere my hands might touch, decent taper, quickly became my all time favorite petty. Hard to capture the alloy detail, but it's fun to stare at

It always works like that. It is one of those universal constants, no matter when you order customs and how far apart they will most of the time come at the same time. Also, when you buy an expensive knife you didn't plan on and you stretch to get it, either a custom will get ready or another expensive knife you've been looking for will be offered to you.

Oh Yeah love me some ASS-All Swede September.. I mean Swedish knife makers of course. Only that is like most months for me really. I feel like there should be a thread for them, but also don't want their prices to go up too much.
 
I bought one of the grizzly 2x42 belt grinders on Black Friday. I needed some cheap knives to practice on so I bought this paperweight from AliExpress out of morbid curiosity. The spine and choil are polished and don't have any pattern and the pattern on the faces are etched into the surface. There were several reviews claiming that it was real Damascus. But, I'm pretty sure this is just some nasty laser engraved pattern, right?

I just ordered a similar honyaki from Docsmith my self. It will be my second from him and I am big fan of his work. Sweet lineup.
 
Not a new knife but a new magnetic knife display easel. Easel was custom made by a friend from curly maple (easel) and walnut (base and magnet covers). Both were oil finished.

The angle of inclination of the easel is adjustable so that the display is suitable for viewing at a range of heights.

Two columns of magnets were imbedded in the maple easel to prevent potential pivoting that might occur due to weight imbalance resulting from positioning.

It does look cool. I say nasty because of my assumption it is fake and that the color is made by a laser marking compound that I would not want on my food. Something like this CeraMark copper stuff. I don't have any Damascus let alone rainbow. I don't get how it can be real but not have any pattern on the spine or choil?

If it's real I could still use it to practice thinning on a 2" grinder 😈

regardless the texture makes me think it's real mokume clad, had a takeshi saji rainbow that had a similar vibe

My friend is a professional cabinet maker so he might be open to custom orders. It was not inexpensive but, although I might be prejudiced, I think it is the nicest knife display I have seen. I was not satisfied with any of the knife displays commercially available and that is why I had this one custom made. I was able to select the wood, etc so it turned out exactly as I expected.
 
Ok I don’t have this guy in hand yet and it’s been a long custom process - but I’m way too excited and wanted to share some gorgeous work fellipi has done so far. It’s a low layer wrought iron damascus with a deep etched wrought bolster and purple jacaranda handle. Itll come with a matching saya too 😍😍😍
