I recently purchased the Masahiro VC 210 mm knife after deciding to list up for sale on BST my larger 240 mm Masa VC knife because it was a bit too big for my kitchen. It's a good knife! It could use a little sharpening, but it's already sharp right out of the box and has great craftsmanship for those who appreciate a well-made handle. It's a reliable carbon beater in the kitchen!

Shiraki Kenichi
White 2 Fuji full-moon/Mikatsuki mizu-honyaki gyuto.
240mm, 47mm, 3.5mm, 214g with ebony wa-handle.
This one has the stamp of Tsubaya and was distributed through Hitohira around 2017, when Shiraki was about to retire.
The sharpener was undisclosed, but from my point of view, it really looks like ground by Morihiro. I brought this to Hitohira, and the staff made similar comments. Anyway, a beautiful Mt. Fuji!!!
 
it was mentioned to me by a vendor that deals with Shiraki homono before directly that Shiraki san never made fuji hamons. It was all nakagawa san. Its still a beautiful hamon.
 
As in just randomly pinging him on IG? Because I've never seen one of those posts with a new knife come up without it saying "NOT AVAILABLE".
I got a feeling that who ever is getting new Yannicks have been trying for ever and have been on some special private list for a while.

Everyone is being coy, so I shall try to be helpful instead.

I got mine by messaging him on IG last year (after building up a bit of a relationship) and asking whether it might be possible to buy something so I could try his work. A few weeks later he popped back up to offer me a nakiri.

I think it’s about being lucky, respectful, and lucky. But also lucky.

I haven’t been able to persuade him to make me a Gyuto yet 🥲

Thank you. I had a feeling it was something about messaging or something and building up a rapport before you actually get one. Anyway, RIP inbox for him 🤣. I'm not going to message him and bother him.... At least not yet. 😂

Thank you for not being coy about it. I appreciate it and I think it's good to at least be honest about these things. Especially since I fully understand the somewhat annoying position he's in, where he's probably being pestered daily about buying knives.

Though it is a little bit self-inflicted since he hasn't established a real process for sales like most independent, popular smiths have.

Ehh... he hasn't been in the best of health for a bit and he has a customer base where he can basically just make and sell to who he wants when he wants...

Also being coy, but in my limited experience, it was not worth chasing him directly these days (seems in the past he engaged the public customer a bit more)... I think the time and effort put into that and being lucky could be halfed by just landing yourself a different popular maker and post a WTT if you realllly need to see what a Yanick is about...
 
I have had luck getting two knives from Yanick. Honestly it mostly luck, being nice (people lack basic manners), and being flexible on what you are getting.

Don’t expect you will be able to get a custom made 240x55mm 5mm spine with extreme taper damascus gyuto with a rosewood and olive spacer handle.

As others have mentioned, he can basically sell anything he makes. The best chance is trading for one and believe or not with a WTB.

Unless you want a honyaki haha. I chatted with him a bit about them and while he was super nice, he said he doesn't find them interesting to make and so rarely does.
