Just got this Nigara Butcher in SG2. Was looking for Munetoshi butcher/slicer or Tinker sabertooth but found this with a different handle and couldn't resist.
came in really sharp ootb and the handle is really nice with a subtle swell. plan to use it to trim silverskin, breakdown chuck rolls and hopefully help me trim flat iron steaks better🤞

Lord forgive me for I have sinned, and purchase a knife under 1g/mm. I trust the performance will alleviate the guilt of the crime.

On the bright side Bidinger was great to purchase from, and the forced patina he stuck on the A2 really pops.

Handle is a bit too well polished for my taste (I am clumsy and like some grip), and it’s a very mazaki profile, but I think those are more quirks to love.
Bidinger’s stuff oozes class man. Congrats!

holy ****. what’s the balance point like on those yo Jiros?
I had a 225 that I regretfully traded but I will admit that the balance was a bit far back. These are literally the thickest tangs you will ever see, and I absolutely love it 😂

I have a 255 now… it’s heavy, it’s balanced and it’s a RAZOR.

I truly treasure Jiros knives… they just feel so special in every way.

Mate, I missed the Hony S-grind when you were selling it. I had to talk to him by myself. Fortunately, he had it available at the time. I still want to get Hony S-grind. Hopefully, he’ll do it once again.

Isamitsu as well, but that's still in the TF universe. After owning the yo and wa, I really like the yo. I was turned off of yo at first after using Jiro with the balance not forward enough.

Received an order from JNS today. Packaging was excellent and knife arrived intact. Munetoshi Kurouchi 195mm All Around and some Uchigimori finger stones. I got this knife so I could mess it up learning how to polish, set bevels, and refinish choil/spine. It is actually a brilliant knife :). Grind seems even. OOB edge was easily paper towel sharp. The K-tip is a little delicate, and I will have to watch that. Looking forward to using / abusing it a little so I can take it to the stones and figure out what the heck I am doing! Great suggestion by a KKF member @HumbleHomeCook.

Masakage Shimo 210mm Gyuto I picked up from Knifewear. Love the reactivity! Patina shown came after slicing up a nice strip steak

There’s a bit o overhang from the scale to tang that I’ll have sand down
I have a touch of obsessive tick that’ll have me rubbing my finger raw there

Jamison Chopp 220 x 55 AEB-L with ringed gidgee, Huon pine and copper handle. I was looking for a good everyday. stainless knife and was able to get on the list for a custom from Jameson chop. I went with these woods to match another handle I have from Skye eilers. This guy's flawlessly done and cuts like a dream.
