Curious what you make of this one. You have such a knack for great buys!
Thanks (I think?)... couldn't do it without the BST sellers and makers putting some real bangers on the market at silly prices though!

First impressions - it's lighter and thinner than I usually go for but not at all delicate. More of a normal, well rounded profile than my last Markin and very neutral, natural balance right at the pinch. Simple but pleasant handle with really nice shape/taper. Banding has awesome detail and the heavy etch should keep reactivity minimal. I may experiment with flitz or stone powder/etch cycles to see if I can achieve a brighter finish that still makes the banding pop.

Performance out of the box suffered from a mediocre edge. I stropped quickly on my Gesshin synth nat before dinner prep and it felt good but not fantastic. Wouldn't mind a little more distal taper for something in this weight class. But later on I was able to spend some time properly sharpening from 2k up to a Belgian Blue and put an absolutely nasty edge on it which improved test cuts massively. Further testing needed but it's feeling promising!

Finally managed to scoop up a Bidinger B-Grind. The hype is real. And this one's a beast.
240mm x 60mm 258g (which is a fair bit heavier than most of his other B-Grinds) in AEB-L. Ironwood and Brass handle.
More of a workhorse for sure. Balance at the Maker's Mark.
Incredible performance, as expected. People aren't kidding.

Feeling really fortunate and lucky after a purchase from a fellow member here on two knives (probably not the biggest mystery to solve).

2. Hado Blue #1 Damascus 240mm Gyuto - WITH A SURPRISE.

I opened the box and immediately recognized that this was not a stock handle and I had seen it before…

From what I have investigated, I’m the third owner of this knife and it was the original prototype of Hado making a Damascus Gyuto for Chef’s Edge in Australia. Really cool discovery and it now makes me really really nervous to use it (and I may never??)

New board from @OwlWoodworks - if you follow him on IG you likely saw his post about this board. Without going in to too much detail, this “imperfect board” became an amazing anniversary gift for my wife.

Pretty sure she now has the best prep set up in our area lol.

Yeps, Special page (nr. 1) - he has some funky stuff knocking around, I guess it's his R&D Dept :)
Fit and Finnish is rough; blade is a bit wonky in the handle, blade road is bumpy a la Roman cobbled street, straight but with small hills, however the geometry is beautiful along with the weighting, edge grind is very nice. Choil needs filing or at least sanding, there is a definite burr on one edge. The KU finish is very very nice, especially under a lupe, very textured and tonal. With some polishing and thinning I think it will be a happy knife.
Let me get back to you when I have chopped up a mound of food.

As an afterthought, it is the first time I have bought from him; overall a very nice experience, quick response to my questions, very quick payment and shipping arrangements, well packed, came with a small pamphlet about his business and a what's-it-called-in-Japanese kitchen T towel/cloth for wiping the knife on.

Sounds promising. Yeah his Special section is fun, lots if bold stuff. I really dig the shape on your nakiri, nice catch.

Watoyamanabe’s grind is usually uneven but still always a great performer.

And make it 3 for 3 gang, I also got mine in today and the edge OOTB is insane

Overall, the geometry, the height, the weight vs. geometry is just fantastic all around.

I now clearly see what everyone is raving about

I did some mirepoix test and thought, wow, this thing is a real laser. Did some measurements and sure enough, it takes the lead spot in my thin BTE. 0.08mm at the heel and 0.06-0.05 from the middle down.

Straight edge reveals a slightly hollow grind, especially toward the shinogi on the back half of the knife. I really want to polish it to bring out more contrast, but it’s going to be a careful endeavor to not get any thinner BTE.

Yeah, I did a few passes on a stone last night just to get a feel for it and I had to use reaaaaallly light pressure or else I could feel the edge start to bend

JJT cleaver san mai Buttereisen TNT666, handle 2 tone gidgee, bronze spacer with boxwood, 195mm x 95mm, 315 Gramm, Taper Handle 3,8mm, middle 2,2, front 1,8mm. Both sides konvex Grinden.

I haven't used mine yet, but I measured ~0.08mm BTE and ~0.15mm 1mm up using plastic calipers, so the measurements might be a little iffy. It's one of the thinnest knives I own, basically neck and neck with my super thin 126g Hado Junpaku 210mm, but significantly heavier and more forward balanced. I'm expecting this to fall through stuff under its own weight.
