It cuts really well. I've used it at work for the last 3 days and have no complaints. The taper on it is really nice, the front half is great for shallots and more delicate prep and the back half can push thru everything I've thrown at it so far.That LaSeur looks really good, how does it cut?

Didn’t think it was possible to make a Seiryu look a bit skinny by comparison, but here we are.
